Black Futsu Pumpkin Bread

As the temperature begins to drop, the days become shorter, and the leaves begin to change, we find ourselves eager to get into the kitchen and bake up some perfectly spiced treats inspired by the season.

Fall is quick bread season, and this magnificent twist on the classic Pumpkin Bread is the perfect pick-me-up to enjoy while cuddled up by a fireplace with friends and family. Made using the rare Japanese heirloom pumpkin known as Black Futsu, this elevated take on Pumpkin Bread delivers a unique richness and flavor profile that simply defies description. Known for its subtle sweetness, creamy texture, and a distinct nutty flavor similar to chestnuts, this recipe delivers a moist, decadent, and adventurous fall experience that you and your loved ones will never forget.

When it comes to the Black Futsu – don’t judge a book by its cover.  While black and blue in color and covered in bulbous bumps and warts, this lovely member of the squash family features a bright orange hue on the inside and an incredible array of sweet and savory flavors that make this Pumpkin Bread so unique and wholly delectable.

Ingredients:

  • 1 1/2 Cups Flour
  • 1 1/2 tsp Baking Soda
  • 4 tsp Cinnamon, ground
  • 1/2 cup brown sugar
  • 1/2 Cup Granulated Sugar
  • 1 tsp Kosher Salt
  • 1/4 cup vegetable oil
  • 2 tsp vanilla extract
Dairy
  • 2 eggs

Produce

  • 15 oz Black Futsu Pumpkin
Maple Butter
  • 1 tbsp maple syrup
  • 1 stick salted butter
  • 1 tsp cinnamon

Directions:

1. Cut Black Futsu pumpkin in half and use a metal spoon to remove the seeds. Lightly coat with oil and place flesh side down on a baking sheet. Roast for one hour in a 425 degree oven. Let cool and then puree in a food processor. Remove half of the puree and save for another recipe.

 

2. Add two eggs to food processor and pulse until combined with pumpkin puree.

3. Add brown and white sugar, vanilla, and vegetable oil and combine.

4. Add the rest of the dry ingredients and mix only to combine. Using a spatula, pour mixture into a bread loaf pan that has been greased.

5. Bake at 350 degrees for one hour.

Butter:

  1. Use room temperature butter. In a small bowl, add cinnamon and maple syrup to the butter. Mix with a spatula until combined. Leave at room temperature for easy spreading.
